If it's "just you" your laptop is likely fine. Hosted tools really start to shine when you've got a group of folks using them. Ex - Wife/Parents/Kids/Extended Family.

Simple k3s cluster and the shallow end of kubernetes actually saves you a ton of time and effort (don't go into complex orchestrators or helm charts - just write small deployments in static yaml). You can get to roughly the same spot with just docker/compose if you want, but the capabilities cap out earlier (ex - multi-machine, resilient to any one machine going down, gpu sharding, etc)

Maintenance is basically "sudo pacman -Syyu" on a cron job.
